Self-paced training books

When Microsoft SBS 2000 and 2003 came out Harry Brelsford published some books that was set as self-paced training. The books taught you the server by setting up a fake company and had you create users and set everything up as if you were doing this for an actual company.
I've been looking for some training in this matter for Server 2012 R2 that would run you through creating a company, users, setup configurations, etc. However, i haven't been able to find a book similar to that. I've reviewed Mastering Server 2012 R2 by Mark Minasi, however, while it is a very good book, it would be great if there was a training pack that took you through the configuration, creating users, and everything else in a mock "production" environment.
If anyone has any suggestions for training material in that format it would be great.
