Establishing Performance Baesline with RHEL Servers

I'm starting to deploy a few virtual RHEL servers and I'm doing a few things to setup a performance baseline (IOSTAT, VMSTAT and MSTAT along with SAR).
I'm wondering what others have done to prepare a performance baseline and how long they ran the commands above. For example for a new VM that I'm deploying, I ran IOSTAT, VMSTAT and MSTAT every hour for 24 hours straight.
