Advise needed from server administrators

We have 5 DellR610s connected to Dell MD1000 Array's through a 6G SAS cable. Each R610 is bridged to a 3750 switch with copper cables.
Our network has been showing slow connections at times - especially for users over VPN.
We've come up with several solutions, for the short term future we want to upgrade the DellR610s and MD1000 acting as the file server. as part of that, we want to place a fiber card into one of the DellR610s (file server) and upgrade the MD 1000 connected to R610 with an EMC VNX5200.
So, on top of that, we want to connect the R610 with fiber connections to a DS300B FC switch. So, discussing this together with the server team, I think we've agreed to eliminate all the slow connection points, and upgrade with Fiber cards. We've agreed on this and I wanted to see what people on here might think, and, or if there is a better way to maximize the speed. Ultimately, since this is an isolated upgrade for the file server I need to work out where to place the DS300B FC switch - upgrade all of the DellR610s with fiber carbs and replace the 3750 with the DS300B. Another way, connect the DellR610 File server to the DS300B and trunk that with the 3750.
A lot to think about, I am having a skype session tomorrow with an EMC network specialist regarding our order and any questions we have for deployment and integration. I'll be sure to ask him all of these questions.
