Does anyone see a problem doing this with a stand alone ESXi host and VCenter Cnvrtr?

We have a location w/two ESXi physical hosts and some VM's. Not beefy machines and they are in bad shape. This locations data is moving to a different state at some point so we don't want to invest in a full blow VCenter install but do want to swap out hardware to give them some breathing room until the move. My thoughts are this:

Take out a new physical server w/more memory and faster local storage. Install ESXi 6.0 on it. Use VCenter converter stand alone to V2V the current machines to the new ESXi host.

My question is about VCenter converter. I believe it will work w/out VCenter to do this but I'm not 100% sure. I just planned on loading it on a 2012 server on a VM inside my new physical host and using it to convert the old hosts VM's.

Does this sound logical?
