Where do health certificates come into the process?

I'm trying to wrap my head around WHERE health certificates come into the VPN process. I'm aware of their purpose and what they're supposed to do. But something is confusing me with regards to their "Request policy" feature. Encryption and key exchange algorithms appear but where do these come into the VPN process?
I was under the impression that authentication is done with PEAP and MsCHAPv2 (if selected) and SSTP for encryption, when the health certificate option is selected on the NPS i was under the impression that this meant a health certificate that validates the clients system etc... So what are the encryption etc... algorithms on the health registration authority used for?
Very confusing but i'm hoping someone with clear this up for me.
