My goal is to become a network security engineer. Presently I work at a helpdesk. Can you all who have been there advise on which projects I should be asking my manager for to get closer to the network security engineer role

You've got a CCNP and CCIE-W, so you're obviously studying and labbing quite a bit with networking. I'd let him know your goals and what you've done so far to accomplish that. If he's not supportive, I'd start looking at a NOC environment or junior network admin role. With IT experience and a CCNP, you shouldn't have any issues getting hired.

I'd suggest maybe building client tunnels and/or firewalls. That's a lot of my projects now. I was Tier 1 support last year, and now I'm a Network Security Engineer for a large health care organization. You have the certs so it looks like you have a really solid foundation of how networks operate. Be willing to let your supervisor know and take on any additional responsibilities. I'm sure you'll get there!
