Hey guys,
I have downloaded Ubuntu for practice on Linux and also have slight knowledge of Linux from use of Kali.
What is the best way to study for this exam? Including which books/activities to use and for a lab setup?

Pretty much any book that has labs you can follow along with should do the trick.

LinuxAcademy has a 30 day trial for $10 which i utilized and love. Free labs in there to use so if you dont have your own, no worries! i just passed using them exclusively.
