Wording advice for my resume.

It has been about 2 years since I last updated my resume. Since then, I have drastically changed my job responsibilities from a Help Desk to working on projects within my company. I am having a difficult time to put into words for a resume on my new responsibilities. I work a lot with documentation and processes within our company. My other responsibilities are to quote server migration projects and perform such projects, quote e-mail projects from either hosted or on premise exchange environments to Office 365. I have also successfully migrated 5 customers to Azure, including implementing RDS farms.

Do I include in the resume how many server migrations I have quoted/migrated? The same for e-mail migrations? I am trying to keep it short and sweet, but show exactly what I do.
