As far back as I can remember its always been available as a Workstation VM.

Works great for me. You may have to File>open instead of the "New VM" wizard. But it works great for me.

I use both Workstation (free) and ESXi. I prefer my ESXi lab because it has 64GB of RAM vs. sharing with my laptop.

Yes. Do
apt-get install -y open-vm-tools-desktop fuse
once your Kali is up and running in VMware. That will optimize your Kali installation; your desktop resolution is resizable and you can copy and paste from host to VM

I think the majority of people I know run it in VMware. You can either do an OS install or use one of the prebuilt VM images that they provide.

So I know I'm replying a little late, but I JUST had this discussion with a co worker the other day.
VMware will make your lab life so much easier ... Just do it ...
However, with that being said, if you are wanting to use Kali in an actual Red Team environment or ... *ahem*... need to actually stay anonymous\safe, then I would not recommend using Kali in a virtual environment. There are most definitely ways to tie a host system to a VM pretty easily. You'd be better off live booting.
I'm assuming you are just asking for lab purposes .... in this case, its seriously a no brainer ...

Why would it create a problem? As long as you have a network connection to connect to the VPN you're all set.
