Does anyone have experience working in a startup? How did you like it? What did you not like?
I've been applying to more IT roles for start up companies. I feel like this would help my career and become more well rounded and get the exposure I need to become the jack of all trades and eventually specialize in something.

In a big organization what you bring is what you flex. Good luck getting your hands on all the new technologies, it can happen but it's usually just in your space. This is for a lot of Gov'n jobs as well.
To your point about being more well round, I would assume you would get that. Obviously each company is different, but I learned SQL while with the start up and my earning power and career potential has increased exponentially.
Ms Access and VBA as well.
I came in a low level support dork with project management skills and left with some strong development foundations.
