Is it necessary to know the individual subcategories of this standard, ex. 802.3z or 802.3u? Will the exam get that detailed?

I didn't run into any questions that specific for any wired technology, but it doesn't mean you won't. I did for wireless. The books I read specifically pointed out 802.2, 3, 5 and 11 a/b/g. Know your cables specifications well.
