Can i install WSUS even though the default website is not set up. Cause i know that for clients to update they can only do so via the default website. So i just need some clarification. And oh yeah i am using small business server.

You have SBS and you killed the default virtual web server, and you still have a functional SBS? Exchange installs stuff to the default website. It can be moved, but it is tricky. SBS doesn't like to be played around with.
