I understand that default encryption in Windows2000 is Keberos in Windows 2000.
This also true in win2003? How about Novell and Linux?

Default encryption for what? BTW, Kerberos is an
authentication protocol
that happens to use encryption to do its thing, not really an encryption method.

Microsoft used their own "interoperable" implementation of Kerberos, specifically RC4 Kerberos, because as I understand it 3DES was not available for export at the time W2K was released and they wanted to use the same type of encryption for both US and international products. I believe the same holds true for W2K3.
