When taking the CEH exam at a prometric site, do they give you something to write on for the test? I understand that there will be some hex to binary conversions, ect.

Yes you should be allowed to have a scribble paper. You probably wont have to do conversions just for the sake of doing conversions, but you might see questions where the data is presented in hex and you're asked to identify what's there.
