Will the server 2003 disc's that come with the MS press book be good enough to really learn this stuff, or do I need to get a real copy of server 2003?

Depends how long you plan to take to study for the exam, usually the Evaluation Copies last 180 Days so if your done in that time then there isnt a problem.

As for the differences to the original media there arnt any, apart from the time restraint.
