Basically:
Simple is a basic, stand-alone dynamic disk.
Striped combines two or more volumes into a single volume. This increase performance but provides no redundancy. This is synonymous with RAID-0.
Mirrored does just what it says, and stores an identical copy of a volume an another. You can have more than two volumes in a mirror, but they are all identical. This is synonymous with RAID-1.
RAID-5 stores data across three or more drives along with parity information that can be used to reconstruct data in the event of one of the drives failing.
