Has anyone had any experience of tinkering with Samba I could really do with so advice / useful tutorials as every time I attempt to play with it things go wrong.

And it's a skill I would like to get under my belt.

What served me best for using Samba was this: http://us1.samba.org/samba/docs/man/Samba-HOWTO-Collection/

and Google. None of the AD integration tutorials with kerberos worked out of the box so you had to kind of meld information from them all together to get AD working with proper kerberos authentication. Also don't forget about "man smb.conf" it is a life saver. Make sure you understand everything you're doing, and not just following by rote.
