Use VM to practice setting things up?

I'm wondering how you guys practiced?...

I was watching the trainsignal videos.

I want to practice actually using windows server 2008 but I only have a laptop with me at the moment.
Can I use VMWare Workstation and install server 2008 and practice AD with it?
If I use VMWare, could I install 2 instances of server 2008 that would be able to talk to each other?

It depends on the specs of your laptop. I can get 6-8 going fairly well on my core2duo with 4gb of RAM. The single disk gets to be a bottleneck though
