Is this a topic that appears alot on the ICND2? Also if it does is there a way to easily troubleshoot this? I get STP and RSTP but everytime it comes to multiple VLANs and STP I start to get a little confused.

What part of PVST is confusing you?
It's basically just a separate instance of spanning tree running for each VLAN, giving you the ability to have different switches act as the root switch for a particular VLAN, if you desire to do so.
Pay attention to your output when you do a show spanning-tree on a switch that has multiple VLANs configured. The information will be clearly divided up on a per vlan basis.
