The key ones are the ones you need to keep track of, for whatever reason.
I find that for a good quick glance at "WTF is this server doing?", the defaults in Resource Monitor do quite well.

That's going to depend a lot on the role(s) that the server is performing.
Here is a performance tuning guide, which will give you a good idea of what counters you may need to look at for a given role:
