Tips for running a simple webserver

I've been toying with Apache on a RHEL5 virtual machine, I've been tempted to set up a box to run a simple website and make it accessible from the Internet (and possibly run a vpn server on the box as well.) I've updated Apache and the firewall (iptables) recently with the CentOs repository. Of course I'll have strong passwords for user accounts on the RHEL5 box. I'm planning to use Dynamic DNS as opposed to getting a static IP. Does anybody have any good tips (particularly security-wise) for running a web server?
I have read a few articles on changing some of the directories that Apache uses but didn't want to risk Apache breaking on me.
