Help with portfolio

Recently, someone close to me mentioned that I should start building a portfolio for potential employers. I will soon have an AS in Computer Networking, and then plan to attend WGU in the fall for network administration. I hold several certifications and host/manage a tech blog. My question is, what type of things would be appropriate for a portfolio? This person wants him and I to do little "projects" to add to said portfolio. Projects such as Xbox modding, computer modding, neighborhood television repair, etc. Now, said person already works in a data center, and is fairly established (compared to myself). So, I feel like I should trust his judgement. But I just don't feel like those would be appropriate things to add to my portfolio, even if I were applying for a simple help desk job. Do you guys think it is okay to add "hobbyist" stuff like that to a professional portfolio?
Goals for 2018: MCSA: Cloud Platform, AWS Solutions Architect, MCSA : Server 2016, MCSE: Messaging
