I have been using the jump start videos and am using office 365 but is there anything else I could read or watch or do to help me get a better understanding of office 365 for the admin and deployment exams

I would check the requirements carefully to see if they have been updated to include Exchange 2010 SP2. How you deploy using a hybrid server with SP1 vs using the New Hybrid Configuration Wizard is SP2 is very different.
