Opinions for a system admin role.

Hi,
At the moment I hold the role of a system admin. Although due to staff leaving and not being replaced I seem to be spending half my lfe doing a helpdesk role.
Now I just completed sec+ and hold a few other Citrix CCA's, MCP, ITIL etc. ( bit of a jack of all trades I suppose ) but I am thinking of adding the 70-682 ( upgrade your XP MCDST to win7 MCITP ) or just do the 70-680 ( straight win7 MCTS ).
My question I suppose is, would employers see this as a worthwhile addition? I can do the majority of the server bits eg exchange admin tasks, GPO changes, AD users, DHCP work etc but that all remains fairly static so I dont tend to do to much day-to-day work with it.
So do you think its worthwhile? I might do a server or exchange exam later but dont have the funds or kit readily available.
