What Routers/Switches for LAB?
I was thinking about buying some 1841's, about 3 of them, would that be enough? Also, should I look into getting 2611xm's or 1760's or are those obsolete? What about building frame-relay and PPP multilink? Wic 1t or 2t? For switches I was thinking two 2950s and two 3550s? Advise?

You are on the right track, I use 1841, 3550 and 2950's in my rack. As far as WIC cards, I would suggest loading your 1841's with WIC-2T cards which will give you two Serial interfaces.
Type of router is arguable but switch wise you need the 3550, 3560 for L3 and 2950, 2960's for L2Modularity and Design Simplicity:
