Are we talking about ubuntu desktop or ubuntu server? If you're talking about ubuntu server then you will need to configure iptables to drop all traffic and only allow the required ports for certain ip addresses. If somebody has access to a port then I don't think you can really hide it from them. Just dissallow them access. If you're talking about ubuntu desktop then there's probably a gui frontend to iptables but I don't use ubuntu desktop so I couldn't tell you the name of it. It's probably wherever your administration tools are located with the word firewall in it's name. Also, if you're just talking about a regular desktop with a private ip address, then the only people who are going to be able to see open ports on your system are the people on your local network.
Being a sys admin sucks but I love it
