Normally I dislike answering normative questions like this with absolutes, but the answer is absolutely traditional UNIX and Linux over Mac OS. Mac OS X is nice for personal use and desktop support, but UNIX/Linux/open source knowledge is much more applicable to more job roles, especially more lucrative ones.
