Upgrade hyperv 2008 role to hyperv 2012 role
Can someone confirm whether or not a box running 2008r2 with the hyperv 2008 role install can simply upgrade the hyperv role to 2012 whilst keeping the 2008r2 os? I attempted it but I get a 'cannot upgrade' error. My assumption is no.

No, upgrades are not feature upgrades, but Operating System upgrades. You have to go to Server 2012 (R2) to get any Server 2012 feature/version/etc.
When you do an upgrade from 2008R2 to 2012, make sure all VMs are powered off, and no snapshots with them.
